Serves 6 – 8
2 punnets baby carrots, peeled and washed
1 teaspoon salt
2 tablespoon maple syrup
2 tablespoon olive oil
2 tablespoon butter
Fresh parsley chopped, to serve


  1. Preheat oven to 190 ◦C
  2. Heat an oven proof dish to medium heat on the stove top, add 2 tablespoons olive oil and place carrots in a single layer into the pan, gently fry carrots until just seared and lightly golden in colour, about 5 minutes.
  3. Add maple syrup and butter to the carrots and place in the oven for about 15 minutes or until just cooked and golden in colour.
  4. Remove carrots from the oven place into a warm serving dish and sprinkle with chopped parsley.
  5. Serve immediately.
